Efficiency of Selected Lactic Acid Bacteria Isolated from some Dairy Products on Aflatoxin B1 and Ochratoxin A

Aflatoxin B1 (AFB1) and ochratoxin A (OTA) are two of the most important mycotoxins associated with tropical subtropical climate as in Egypt. Therefore, this study aimed to isolated lactic acid bacteria (LAB) Bifidobacteria from some local dairy products Egypt using strains reduce/or remove AFB1 OTA toxins. Fifty samples, milk products, including ten samples each, Kareish, Damietta cheese (soft type), buffalo’s milk, yoghurt (zabady), naturally acidified (Rayeb)were screened for their load Lactobacilli, Lactococci Bifidobacteria, MRS agar, M17 agar (MRS-Cys) respectively. The obtained data indicated that 38, 31 22 isolates belonged Lactobacillus, Lactococcus genus Bifidobacterium, Fourteen LAB Bifidobacterium were tested on PBs contaminated by10 ppb three times incubation periods (6, 12 36 hours) at 37°C. results all able reduce different rates ranging between 12.1 65.4% after 6 h. These increased 78.8% 89.9% 37°C 36h, same OTA, where percentages reduction 81.4 80.4% when cells was done prolonged According results, percentage increasing time each strain.
